Paleo Peanut Butter Banana Blondies

The other day while perusing the fruit bowl in the kitchen I noticed our bunch of bananas was getting particularly brown.  Not wanting them to go to waste I quickly thought up what I could make.  I was in the mood for something sweet, but didn’t want to labour away making anything too complicated.  I thought about making another batch of my fabulous Paleo Banana Bread, but when I looked in the cupboard I realized I didn’t have any almond meal.  So I put my thinking cap on and what I came up with was nothing short of sensational.  This recipe is paleo, gluten free, dairy free, and can be made sugar free too.  But best of all it takes about 5 minutes to put together; just blend and bake!

Paleo Peanut Butter Banana Blondies

Prep Time: 5 mins Cooking time: 20 – 25 minutes

Serves 12

Ingredients

  • 2 ripe medium bananas
  • ½ cup natural peanut butter or other nut butter of choice
  • 2 tbsp maple syrup or 2 tbsp raisins (for sugar free option)
  • 1 tbsp ground flaxseed
  • 1 whole egg
  • 2 egg whites
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt

Method

  1. Pre-heat oven to 325°F (165°C).  Grease and line an 8 x 8 inch brownie pan with baking paper.
  2. Combine all ingredients in a blender or food processor and blend until all ingredients are incorporated, about 1 minute.
  3. Pour batter into greased pan and bake in pre-heated oven for 20 – 25 minutes, or until toothpick inserted comes out clean.
  4. Let cool for 10 minutes before cutting.  Will keep refrigerated for up to one week or frozen for up to 3 months.

      Hope you enjoy the recipe…and you can change up the nut butter too! I’m thinking ABC (almond, brazil, cashew) butter would be great for my next batch

    So yummy and healthy and healthy! I love to bake with leftover bananas ~ also peel and freeze them for banana soft-serve, which I have when I want ice cream. Fave sugar-free goodies lately have been chia seeds soaked with water for 15 min till gooey, then with full-fat coconut milk and a small sprinkling of cacao powder. Bittersweet chocolate chia pudding, super-delish and easy!

      Chia pudding sounds excellent. I put some in the freezer as well. Hopefully it gets hot enough to make some soft serve…or I might just rug up and eat it anyway haha

    Those look so good! I’ve seen people try the chickpea blondies but these look more my style :)

      I’ve never had chickpea blondies, but have made black bean brownies. They were pretty successful…even my veggie hating brother ate them!

      oooo your protein muffins look great! the PB2 would probably work but i’m thinking they may not be as moist. Let me know how it turns out :)

    Wohoo, I have all these ingredients at home, except I’ll have to use honey instead of maple. I’ll have to make this today! In fact I’m going to do this straight away. It looks nice and warm, just what I need now.

    Made these tonight. They tasted amazing! I halfed the cinnamon and added 1/4 cup of Enjoy Life chocolate chips. Super yummy! They reminded me of a moist banana bread. I will definitely be making these again!
